These dishes are made from simple, low-cost ingredients and require minimal effort on your end. (Talk about a weeknight win!) 

1. Potato & leek soup

When we think about warm, cozy recipes, we think soup. This winter, add a new soup recipe to your repertoire with a rich, creamy potato-leek option. The base of this soup is made from potatoes, one of the cheapest ingredients in the produce section, and flavored with oniony leeks, crushed garlic, and fresh or dried herbs. Get creative and top your bowl with crispy bacon, grated cheese, or homemade croutons. Bonus: it's perfect for meatless Monday! 

2. Five-ingredient chili

Chili is a hearty dish with just a few ingredients, and it comes together so quickly. If you have ground beef or turkey in your freezer, you probably don't even need to go to the supermarket. Just combine with low-cost pantry items like your favorite canned beans, diced canned tomatoes, and chopped peppers (if you want a little extra flavor). Top it off with whatever you have in your fridge: shredded cheese, sour cream, sliced avocado, leftover corn, or even crushed tortilla chips. 

3. Chicken & dumplings

If you're someone who loves creamy chicken soup or flaky pot pie, try this cozy meal that sports an extra time-saving hack. Combine shredded cooked chicken with stock, cream of chicken soup, celery, carrots, and your favorite pantry spices (maybe dried thyme, rosemary, or parsley). To save time, roll out store-bought biscuit dough to use for the dumplings. You'll need to drop the dough into the boiling chicken mixture. Get creative with fun shapes, or keep it consistent with evenly-cut strips. 

4. Crockpot pulled pork

Slowly cooking a pork shoulder is an easy way to transform an inexpensive cut of meat. Coat the pork in brown sugar, salt, and pepper, then cook it in your crockpot (low and slow!) with water, garlic, and onion. Once it's fork-tender, toss it in your favorite barbecue sauce and serve on hamburger buns, in tacos, or with your favorite southern-inspired sides. For an even easier twist, skip the seasonings and cook it directly in BBQ sauce for a super-juicy version. Leftover pulled pork? Serve it over nachos for a next-day snack. 

5. Veggie lasagna

Give a hearty, cheesy classic a healthy twist by adding some veggies. You can use frozen vegetables, fresh ones, or leftovers from last night's dinner. Layer them between the lasagna noodles with jarred tomato sauce and shredded mozzarella cheese, then bake in the oven until golden brown and perfectly melty.
